Shortcut Dinner (6 ingredient Apricot Chicken)

I love to try a new recipe ... if it has 6 ingredients or less.  
(chicken, apricot preserves, mustard, soy sauce, butter/oil, almonds)
My apricot chicken was a total hit!
(1) Toast some slivered almonds, set aside
(2) In a sauce pan, combine apricot preserves, whole grain mustard, soy sauce and butter. Saute for about 3 minutes over medium heat until it is thick.
(3) Pound chicken breasts until they are very thin.  Bake in the oven with a little olive oil until they are cooked through.  
(4) Add the apricot sauce to the chicken and broil for a few minutes until it carmelizes.
(5) Top with roasted almonds and serve.
Yum!
Serve with something sweet like a salad with mandarin oranges or coconut rice.
