Shortcut Mom Italian Lunch

When I'm in a rush, it's easy to grab for a power bar and call it lunch. I know I can do better than this!

I wanted some veggies and protein for lunch today, but was too lazy to make or purchase a salad, so I 'assembled' another one of my lazy mom tasty and healthy lunches.

Add cherry tomatoes, raw walnuts, fresh basil, and pre-sliced mushrooms to a bowl (notice no slicing or dicing so far).  Drizzle with olive oil, balsamic vinegar, and add a sprinkle of grated parmesan. Microwave for 45 seconds.

Good. Filling. EASY!
