
Canned pumpkin is genius ... and should be enjoyed during all of autumn.
Can you believe that these cookies are made with olive oil, egg whites, whole wheat flour, non-fat milk and kids love them? They are high in fiber and vitamin A.
1 can pumpkin (about 2 cups)
1/2 cup olive oil
2 egg whites
2 cups whole wheat flour
2 tsp baking powder
2 tsp cinnamon (I use more)
1/2 tsp salt
1 tsp baking soda
1 tsp nonfat milk
1 tsp vanilla extract
1/2 cup brown sugar (still haven't found a good sub for sugar)
2 cups choc chips
1/2 cup walnuts
Combine all ingredients, adding the chocolate chips last.
Bake at 350 degrees for 10 minutes. Yummmm.
(The original recipe was from AllRecips and is called Pumpkin Chocolate Chip Cookies III. It recommends twice as much white sugar, white flour, eggs, half as much pumpkin, etc)
