Marinade one pound of cubed steak or chicken (or lamb if you swing that way) for at least 1/2 hour in the following mixture:
1/4 cup honey
3 tbsp orange juice
2 tbsp crushed garlic
1 tsp ground cumin
Prepare quinoa according to manufacturers instructions except ... add the following before cooking:
1/3 cup golden raisins
1/4 cup orange juice (replace 1/4 cup of the water in recipe)
1 tsp cinnamon
1 tsp cumin
1 tbsp crushed garlic
salt, to taste
After quinoa is cooked, stir in 2 tbsp fresh parsley. (My parsley plant is going nuts right now!!)
Cook skewers over an open grill according to your preference.
Serve with a fun moroccan drink like mint and honey iced tea.
