Moroccan Quinoa and Kabobs

Mmmmm. MMMMMMMMM. I love the spices in Moroccan food. This marinade is very simple and uses ingredients you will have on hand. Isn't that the best kind?

Marinade one pound of cubed steak or chicken (or lamb if you swing that way) for at least 1/2 hour in the following mixture:
1/4 cup honey
3 tbsp orange juice
2 tbsp crushed garlic
1 tsp ground cumin

Prepare quinoa according to manufacturers instructions except ... add the following before cooking:
1/3 cup golden raisins
1/4 cup orange juice (replace 1/4 cup of the water in recipe)
1 tsp cinnamon
1 tsp cumin
1 tbsp crushed garlic
salt, to taste

After quinoa is cooked, stir in 2 tbsp fresh parsley.  (My parsley plant is going nuts right now!!)

Cook skewers over an open grill according to your preference. 
Serve with a fun moroccan drink like mint and honey iced tea.
