This citrus salmon and snap pea salad is SOOOO satisfying

Citrus Basil Salmon with Sugar Snap Pea Salad

Salmon: (the only fancy ingredient is basil oil)
Whisk together the sauce: 
2tbsp basil oil, 
4tbsp lemon juice, 
4tbsp lime juice, 
lemon zest, 
lime zest, 
1tsp salt, 
1tsp pepper, 
strips of fresh basil. 
In a skillet, cook salmon in half of this mixture on 4 minutes per side. 
Once cooked through, drizzle salmon fillets with remaining sauce. Yum!

Snap Pea Salad: (my daughter loved this!)
In a large bowl, combine: 
1 tbsp lime juice, 
1tsp pureed or grated ginger, 
1 tbsp olive oil, 
salt and pepper.  
Add 4 cups of snap peas, 1/4 of a red onion, finely sliced, and a generous amount of sesame seeds.  Yum! 
This requires no cooking but is so tasty.
