Healthy Crepes. SERIOUSLY!

I was impressed by how tasty these healthy crepes were!  The recipe is from allrecipes.com, I only slightly modified it. 
  • Egg whites instead of eggs
  • Whole Wheat Flour instead of white flour
  • Olive Oil instead of butter
  • Skim Milk instead of whole milk
Whisk together:
1/2 cup whole wheat flour
2 egg whites
1/2 cup skim milk
1 tbsp olive oil
pinch of salt

Coat non-stick pan with olive oil, swirl in a 1/3 cup of mixture and cook over medium heat until the edges brown.  Flip.  Serve with either:
1) A sliver of butter & a dust of powdered sugar (Jack)
2) A sliver of butter & a sprinkle of salt (Julia)
3) Sliced Strawberries & Blueberries (Sandra)
Go figure: Mike doesn't like crepes.
