Perfectly Autumn Side Dish

I've made this in the past, but forgot about it until it reappeared at Thanksgiving this year at my mother in law's house! This is an 'assembly-dish' - a great alternative to fruit salads, fruit cake (ew!), candied fruit or jello monsters, I mean jello molds.

In a large bowl, combine:
  • Pomegranate seeds from 2-3 large pomegranates (TJ's sells just the seeds)
  • 3 large apples diced into small cubes
  • Dried cranberries (usually sweetened with something like orange)
  • Whole, fancy cashew nuts

Can be made a few hours ahead of time ... I suspect the citrus in the other ingredients keeps the apples from browning, but I don't know for sure. Pears are also a great addition to this dish.
