In a large bowl, combine:
- Pomegranate seeds from 2-3 large pomegranates (TJ's sells just the seeds)
- 3 large apples diced into small cubes
- Dried cranberries (usually sweetened with something like orange)
- Whole, fancy cashew nuts
Can be made a few hours ahead of time ... I suspect the citrus in the other ingredients keeps the apples from browning, but I don't know for sure. Pears are also a great addition to this dish.
